Cherries for this lot are harvested following a strict ripeness criteria. They are then exposed to a dry fermentation of 15 hours before being pulped and dried on raised beds to the ideal moisture content. Luis Anibal has been growing coffee for over 20 years but only sold his first specialty lot in 2013. He was one of the first growers in Colombia to produce Gesha, planting 5,000 Gesha trees in 2012 when very few knew about this variety in Colombia. These days he grows 26 different varieties including Pink Bourbon, Wush Wush, Tabi, Striped Bourbon, Maragogype, Java, Yellow Bourbon, Liberica, Typica, Papayo and more. This microlot is 100% Caturra. This variety originated in Minas Gerais, Brazil. It is a natural mutation of Red Bourbon. Caturra produces more coffee and is more resistant to disease than Bourbon.
Best Consumed: 10 - 30 days post roast date
This coffee is great for almost all brew methods but our favourite is either Kalita Wave, Aeropress, Clever Dripper or Espresso. For filter we recommend 6g of ground coffee for every 100ml of water at approx 96c. Use gram scales you love it!
