Grown by Felipe Arcila at Jardines de Eden. This coffee was exposed to an initial dry anaerobic fermentation of 24hours. The cherries are then placed inside grain pro bags for 60 hours maintaining a temperature below 22 degrees by placing the bags inside water tanks. After this, the coffee is dried on raised beds until 18% moisture content is achieved. The coffee is then placed back inside grain pro bags for a further 50 hours. Finally, the cherries are dried on raised beds to 10.5% moisture content. 

Jardines del Eden is the first farm to be purchased by Carlos and Felipe Arcila of Cofinet. The Farm has existing Castillo and has recently had some the most exciting varieties planted there.

This micro-lot is 100% Castillo. This varietal was developed by the Federacion de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.

Best Consumed: 5-20 days post-roast date

This coffee is great for filter brew methods. Our favorites are Kalita Wave, Aeropress or Clever Dripper. For filter, we recommend 6-7g of ground coffee for every 100ml  (1:16 or 1:17) of water at approx 96c. Use your kitchen scales you’ll love it!
