Luis Anibal has been growing coffee for over 20 years but only sold his first specialty lot in 2013. These days he grows 26 different varieties including Pink Bourbon, Wush Wush, Tabi, Striped Bourbon, Maragogype, Java, Yellow Bourbon, Laurinha, Typica, Papayo, and more.
This micro-lot is 100% Pink Bourbon. This variety is currently under research in order to determine its origin. It is said that it is a mutation that took place at 2100m in San Adolfo, Huila.
The cherries were exposed to a dry anaerobic fermentation period of 15hours. The whole cherries were then moved to raised beds until they reach ideal moisture content.
Best Consumed: 5-20 days post-roast date
This coffee is great for filter brew methods. Our favorites are Kalita Wave, Aeropress or Clever Dripper. For filter, we recommend 6g of ground coffee for every 100ml of water at approx 93c. Use your kitchen scales you’ll love it!
